CARROT, ZUCCHINI, AND PEA SHOOT SALAD
WITH SHALLOT-THYME VINAIGRETTE
Serves 4 Crunchy carrots combined with shaved zucchini and earthy sweet pea shoots give this salad an interesting texture and a bright, healthy flavor. Here the salad is dressed in Shallot-Thyme Vinaigrette, but another great option is Meyer Lemon Vinaigrette (here), which really brings out the sweetness of the carrots and the rustic notes of the zucchini.
